We do our best to estimate the weights of the half or quarter beef below to give you a good idea of how much the beef would cost, however, it is realistic to expect a variability of 50 lbs +/-.

Bones and organ meats such as liver, heart, and kidney come with the order only if requested . Please indicate that you want them when you are filling out the cutting instructions. Feel free to customize your cuts. However, please make sure to send in your instructions with your order, otherwise, your order will be cut to the standard cuts we recommend.

If this is your first time ordering our beef, we do recommend that you start with the standard cuts. They are the proven favorites of the majority of our customers for the last 20 years.

**Please know that customers from last year have priority in order fulfillment until March 20th. After that, orders will be confirmed on a first-come, first-served basis. If orders sell out, we will refund the deposit.
