Bones and organ meats such as liver, heart, and kidney come with the order only if requested . Please indicate that you want them when you are filling out the cutting instructions. Feel free to customize your cuts. However, please make sure to send in your instructions with your order, otherwise, your order will be cut to the standard cuts we recommend.

If this is your first time ordering our beef, we do recommend that you start with the standard cuts. They are the proven favorites of the majority of our customers for the last 20 years.

**You will receive your confirmation of your order with pickup date within 2 weeks of making your order. Please know that existing customers from last year have priority in order fulfillment until April 15th. After that, orders will be confirmed on a first-come, first-served basis. If orders sell out, we will refund the deposit.

). This is a good way to sample and test our products before you do a "bulk" purchase.
